Pepsin, an acidic protease, is the principal proteolytic enzyme of vertebrate gastric juice. Its inactive precursor, pepsinogen, is produced in stomach mucosa. Historically it is of interest as one of the first enzymes to be crystallized. There are several pepsins designated A, B, C and D. Pepsin A, the major component, has a MW of 35kD. Pepsin cleaves proteins preferentially at carboxylic groups of aromatic amino acids such as phenylalanine and tyrosine. It will not cleave at bonds containing valine, alanine or glycine. Storage and Stability: Lyophilized powder may be stored at -20 degrees C. Reconstitute with sterile buffer or ddH2O. Aliquot and store at -20 degrees C. Reconstituted product is stable for 6 months at -20 degrees C. For maximum recovery of product, centrifuge the original vial after thawing and prior to removing the cap. Further dilutions can be made in assay buffer. Country of Origin: Produced from animal sources of North American origin, collected in United States Department of Agriculture (USDA) approved facilities and inspected to be free of disease.
