Chitinase is an extracellular enzyme complex that degrades chitin. It has been detected in many microorganisms and also in the digestive tracts of many animals that feed on chitin-containing organisms.\n\nThe enzymatic hydrolysis of chitin to N-acetyl-D-glucosamine is performed by two consecutive enzyme reactions. The first one, chitodextrinase-chitinase is a poly(1,4-b-[2-acetamido-2-deoxy-D-glucoside])-glycanohydrolase (EC. 3.2.1.14), which removes chitobiose units from chitin. The second one is N-acetyl- glucosaminidase-chitobiase, which cleaves the disaccharide to its monomer subunits, N-acetyl-D-glucosamine (NAGA). The optimal reaction temperature is 37 degrees C.\n\nChitinase Activity: (same/more than)200 units/g solid \n\nUnit Definition: \nOne unit will liberate 1mg of N-acetyl-D-glucosamine from chitin per hour at pH 6.0 at 25 degrees C in a 2 hour assay.\n\nStorage & Stability:\nLyophilized powder may be stored at 20 degrees C. For maximum recovery of product, centrifuge the original vial after thawing and prior to removing the cap. Further dilutions can be made in assay buffer.
